Instructions :

  2. Meanwhile, preheat the grill to medium heat. Brush the vegetables (zucchini, red bell pepper and red onion) with olive oil, then grill for about 5 to 7 minutes on each side, until lightly browned.
  3. In a large bowl, combine the cooked quinoa, roasted vegetables, lemon juice, salt and pepper. Add chopped fresh mint leaves for extra flavor if desired. Serve chilled.

  5. Serve the lettuce wraps immediately. You can serve them with a yoghurt or coriander sauce if you like.
